J. Kenji López-Alt is one of my favourite chefs and food people around. Why? Because he makes cooking accessible. He breaks down the whys and hows of recipes and our favourite dishes. He taught me that it’s OK to have shitty knives and that as long as you have a ceramic mug around, you can sharpen those shitty implements!
So when he embarked on a mission to make the perfect chocolate chip cookie, you can bet I was hooked. His overview of the science behind this particular type of cookie is really great and so approachable!
